All our meat is from animals born and reared on the farm. Meat is hung in our own cool room and butchered in our cutting room adjacent to the shop, and hung for up to 28 days, ensuring great marbling and tenderness.
Our Hereford beef cattle are grazed naturally on clover rich meadows. Our Rose Veal comes from Hereford cross dairy calves, naturally suckled on cows for six months, on grass or in open yards, to give a succulent pink meat.
Our award-winning lamb and hogget is from Kent’s indigenous Romney breed, renowned worldwide for its quality. We also produce lamb from Dorset sheep, another native breed recognised for high eating quality.
Our Gloucester Old Spot pigs forage naturally in family groups in open paddocks throughout the year and give a wonderful traditional pork flavour.
We are able to make any joint or cut available to you for that special occasion. There are sausages and burgers, bacon and ham, both smoked and unsmoked. We smoke our own ham and bacon on the premises. You can also order game, including duck, pigeon and rabbit, when in season.
Milk, cream, cheese and ice-cream are all produced from our small herd of dairy cows at the Silcocks Farm Dairy with quality and taste the hallmarks of our dairy produce.
Our soft, creamy Boresisle cheese, reminiscent of the best of France but with the added benefit of being produced here in Kent is complemented by our fresh Saint Michael’s cheese. New to our family of cheeses is the St Michael’s Blue, a soft cheese with dolcelatte-like characteristics.
Ice-creams with seasonal flavours give year-round pleasure, from cinnamon and rum & raisin at Christmas time, to strawberry and raspberry in the summer months. Our more unusual flavours include gooseberry or rhubarb and custard.
In our farm shop we also have a range of seasonal organic fruit and vegetables, jams, pickles, chutneys, honey and curry mixes, together with our own range of hand-prepared pre-cooked frozen dishes such as veal and beef pies, casseroles and steak and kidney puddings.
