Ken Mulholland posed the question: "How do you cope when your business gets so big that it affects the weather?"

From its modest beginning a couple of generations ago Brakes has grown from a Kent based ready-meal operation to a global giant. The business model is simple: buy, store and sell. Applying this model to a range of 17,700 items creates a need for sizeable storage and extensive transport facilities. This can be a costly process, made more complex by increasing legislation to do with airborne emissions such as ammonia, methane and carbon dioxide.
 
Ken explained the philosophy of the company: reduce the "carbon footprint", use less water, reduce pollution by using more efficient cooling processes and reduce waste by moving products to their destination within their storage life. He summarised this as "the science of saving resources".
